Insignia's and runes for my pve mesmer
As the title suggests, what should my mesmer wear?
I'm thinking of getting full radiant, and 1 superior

Superior and radiant runes are usable, but +Energy doesn't help your energy maintenance or upkeep. Supers also take a hit from your health, and in Nightfall things hit hard.
Personally, I use 1 major rune at most (in PvE) and full health armor. I also have sets with +10 vs X armor, which can be used for certain circumstances where they are beneficial. In terms of overall usefulness though, I'd go with health. Comes down to preference and playstyle to an extent though.

I refuse to give up health for superiors, I like lost of energy so I use radiants and runes of attunement where I do not use the skills.

I use radiant but I found them on travels, but until I found them I used (+5+5+5 while skills recharge).
I do not notice that much of a difference with the extra energy from the runes though. And I do use the superior main attribute rune. Mesmer attribute runes are cheap so splurge on yourself. For health +30 rune from the start and then upgrade if you find something better later on. (Most of my toons have purple for health)

I like to have 45 or so energy to make AI more easily usable with 25e skills without weapon switching (I haven't got my pve mes an emergency set yet). My main set was radiant with 1-2 majors and 2 minors. Mesmers tend not to have significent breakpoints, I just don't really feel any gain in the extra 1 attribute. I did go for survivor though, didn't want to make myself too easily killed.

its much better to run weapon swaps than energy armor. Weapon swaps allow you to swap up for say auspicious +25e skill or something.

In pve? Why waste your time when it's entirely unecessary? I run at something like 640 max on my main pvp set but I got my mesmer's survivor (3) with ~520 though, most of it H/H with no defensive heroes. Aggro management > armour and health.

I've PvE'ed without armor on and succeeded with aggro management and henchies only, everyone should use no armor!
I think what I'm saying is, your argument is invalid.

In which case, for nice, general, PvE play I would be tempted to agree with Avarre and suggest Survivor insignia. If your energy management is good enough you don't need extra energy, and I find the Mesmer-specific insignias horrible!
Personally, however, I like my superior runes
I use a Superior Domination or Illusion on my headpiece (depending which I plan to use - and of course could be replaced with Major or Minor runes depending on how comfortable you are with the health-loss), a Minor Fast Casting and a Minor Inspiration, a Vigor rune and a vitae rune. On the odd occaision I play one of my patented 100% obscure builds I also have a headpiece for Fast Casting...but that's another story entirely.

Yeah? I dunno, maybe if you lose some of that hyperbole your argument might become more persuasive. I'm not quite getting it.
